This Mexican shrub is used as you would regular oregano. In the Dallas area in mild winters, it is evergreen; other times, it may drop its leaves. It blooms all summer with long tubular lavender-pink flowers. Sprigs of this can be added to hot coals before grilling steaks. Add the leaves to meat or chicken marinades. Mexican Oregano adds a lively taste to beef stews and beans. | |
