Borage has large, rough-hairy, silvery leaves & blue blossoms. Its flowers make beautiful garnishes. Add the tiny leaf tips to salads or drinks for a cucumber flavor. Leaves are edible when cooked. Eat stalks raw as you would cucumbers. Goes exceptionally well with cheese. Chopped leaves are used as a garnish for salads. The blue flowers can be used in fruit drinks or scattered over a platter of sliced tomatoes in vinaigrette | |
