Spicy Tomato Cilantro Vinaigrette
1/8 cup Extra Virgin Olive Oil
2 Tbsp Lemon Juice
2 Tbsp Fresh Lime Juice
¼ cup Cilantro
2 clove garlic, minced
1 Small Roma Tomato
1 Small Serrano Pepper
dash of salt
pinch of red pepper flakes
Blend together! That’s it!

Roasted Fig Balsamic Vinaigrette
2 tsp Dijon Mustard
¼ c Balsamic vinegar
1/8 c Maple syrup
¼ cup Maple Syrup1 tsp Kosher Salt
2 Tbsp Roasted Fig Preserves (homemade or store bought)
3 Tbsp minced fresh Mexican Mint Marigold
1 ¼ cup Olive Oil
In a blender, blend the first five ingredients, except the
olive oil, until smooth. With the blender running, stream in the olive oil to
the mixture until well belended. Pour into a glass container, cover, and
refrigerate for at least 2 hours so that the flavors are incorporated.

1 cup Vegetable or Salad Oil (our chef judge thinks olive
oil would be best)
¼ cup Lemon Juice or Red Wine Vinegar
1/3 cup Fresh Parsley Leaves and Tender Stems
2 Tbsp Fresh Marjoram, chopped
1 Tbsp Fresh Thyme, chopped
2 Tbsp Fresh Basil, chopped
½ tsp Celery Seed
1 Clove Garlic
1 tsp Salt
¼ tsp hot pepper sauce
Blend all ingredients at high speed for 30 seconds.
